These are the oysters that have made the reputation of the Marennes basin since the day when ripening was invented. They represent the largest part of the oysters refined in Marennes-Oléron.
They are refined in our "claires", (clay basins), for two weeks in summer, at a rate of one kilo per square meter and four weeks in cooler periods for a density of three kilos per square meter.
They are often green, a token of their ripening, and marketable all year round.
