The EARL SUIRE PERE ET FILS is a family business, the fourth generation of oyster farmers in the family. The company was created by Pierre SUIRE in 1961, taken over by his son Jean-Pierre in 1992, then by his granddaughter Aurélie and his companion Dominique BOUTHIER.

 

The work of the oyster is an art that is passed on from generation to generation in order to perpetuate a know-how.

Perfect compromise between modernism and tradition, the establishment is located in the center of our 19 hectares of marsh, 9 hectares of "claire", in order to follow closely our oysters during breeding or maturing. These clears are at the heart of the best terroir in the Marennes Oléron basin; terroir that gives our oysters exceptional quality.

 

Our oysters have moreover been awarded more than 20 medals (gold, silver, bronze) in the General Agricultural competition in Paris or in the Regional Savory Poitou-Charentes competition.

 

We market around 200 tonnes of oysters per year. We produce 50-80 tonnes on our 8 hectares of parks located mainly in Marennes Oléron.

 

Nine people are employed full time for our oysters to garnish your seafood platters. Twenty to twenty-five temporary workers help out at the end of the year celebrations.

 

We have equipment suitable for the proper functioning of the business - sorting chain - forklifts for pallet transfers - oyster washer to guarantee rigorous product cleanliness - grader to sort oysters by unit weight - oyster screen (homogenization oysters) - scalding machine (spat removal and shell epibionts) - strapping machines to seal packages - flatbed trucks - two oyster vessels for moving around the parks - specific printers for sanitary labels - computer with software adapted to our profession…

 

To date we use the space of the old packaging building, around 240 m², for grading / sorting. Outside there is a washing area, three purification drainers and two platforms. The new building built in 2016 is used for the packaging of oysters, storage, packaging, office and archives for an area of ​​around 500 m². In 2018, the storage disgorgers were covered, to limit the rise in water temperature in summer and thus limit the mortality of oysters.
