The shellfish farming professions
Our company has a dozen full-time people and around twenty-five more for the holiday season.
This job is sometimes tough and difficult and each has his own specialty. Most of the time women work on land and men at sea or in the swamp.
Our four oyster workers, commonly called cabin women, are responsible for various but invariably manual work and often performed in the cold and humidity.
They deal with the separation of the separation of young oysters stuck together, sorting in order to standardize the batches of oysters put in the breeding, grading, consisting in grouping the oysters in a homogeneous batch called size or number (link to page caliber) made by hand and more recently using a grader.
And finally, they condition the oysters, counted one by one and packed in bags, then weighed and encircled, ready for shipment.
They take great care in packaging, which allows good conservation of the oyster.

The four workers (sailors) are responsible for the cultivation of oysters, from birth to marketing, and for the maintenance of the parks and fields of clears. In all seasons and in all weathers, they sail on the oyster vessels the Ecaille d'Argent and Admiral Pierrot.

All these operations take place simultaneously. Three or four generations of oysters are grown at the same time. Culture, maturing and marketing are concomitant.
