(Les Marennes)

They complement our range of quality oysters. True Marennes when they are green, or simply refined in "claire" to reduce the powerful taste of iodine, they represent the ancestral oyster from the French coasts, the original oyster from our basin.

 

Our flat oysters are raised in the sea, then in "claires" like the famous Pousses en claire by Marennes Oléron. The spat, the flat babies, from natural collection at sea or hatchery, raised on oyster farming chains, is rocked by the swell and the waves of the ocean for a year.

 

At the end of this maritime breeding, the small flat oysters, which have already grown well, are reared for six to ten months in our oyster farms, as were the famous Marennes of yesteryear where our clear shoots are today. . With a very fine, very sweet taste, different from that of very iodized flat oysters raised only at sea, they have something to delight the palate of lovers of quality oysters.

 

The plates, sometimes incorrectly called Belons ( the Belons are only produced in Brittany, ours are from Marennes ) , are available during autumn, winter and spring at the peak of their taste quality.
