The opening of the oyster

Step by step ...

  • Just before consuming

  • No protection needed, clean hands

  • Knife with short, pointed blade

  • Position :

  • Right-handed : oyster in the left hand, hinge towards the wrist, hollow shell in the hand

  • Left- handed: oyster in the right hand, hinge towards the fingers, hollow shell in the hand

  • Thumb positioned on the blade for guard

  • Inserting the knife :

  • Right-handed : insert the knife at your middle finger (2/3 of the shell from the hinge)

  • Left-handed : insert the knife at the level of your little finger (2/3 of the shell from the hinge)

  • Make the blade penetrate, never force

  • Cut the muscle

  • Lever with the blade

  • Detach the flesh from the upper shell

  • Empty the first water with broken shell debris when opening

  • Reposition the flesh correctly

Little tips ...

If despite these explanations you cannot open your oysters, don't worry! And above all do not hurt yourself, because each year, there are about 2000 accidents , due to the opening of oysters.

 

Here are some tips that you may find useful:

 

- Put your oysters for a few seconds (2-3 seconds) in the microwave. They will open just enough to pass your knife.

 

- Put your oysters for a few minutes in sparkling water, they will open more easily.
